This version of my Spaghetti Bolognese is made from ingredients that are in your refrigerator and pantry, its a simple, quick and flavourful recipe especially for a last minute meal. Last night I wasn’t in the mood to take too much trouble making anything from scratch, I went through my fridge and found 2 key ingredients that inspired me to make a quick last minute dinner. Of course you can tweak this to your taste but simpler the better, hope you enjoy it, I know I did!

INGREDIENTS | PROCEDURE |
200-g Pack of Spaghetti 200-g Cooked mince 1 Bacon slice, chopped 2-cups Tomato ragu (left over in your fridge or store bought like Barilla tomato sauce) 4-tbsp. Sun dried tomatoes 2-tbsp. Jalapenos chopped 2-tbsp. Olives sliced 4-tbsp. Fresh basil, shredded 1/2-tsp. Italian herbs, dried 100-ml Tomato puree | 1. Bring a large pot of salted water to boil, add the spaghetti and cook for 8-mins, until al dente, drain, drizzle lightly with olive oil. 2. Meanwhile in a sauté pan add the chopped bacon and render the fat until the pieces are crisp. 3. Add the cooked mince, tomato sauce, sun dried tomatoes, jalapenos, olives, puree, Italian herbs, 1/2 cup of water and bring to a boil, reduce to desired consistency. Garnish with fresh basil leaves. 4. Serve the pasta and ladle the Bolognese sauce over the top, enjoy! |
