This dish may not be too popular in Asia, it is a lovely side dish, especially with sausages, meats and poultry. Puree the peas and becomes a lovely garnish on a well plated gourmet meal. I've tried it, loved it and am sure you will too. Enjoy!


INGREDIENTS:
2-cups Frozen peas, defrosted
1-tbsp. Butter
1-tbsp. Mint leaves, chopped
1-tsp. Lime juice
Salt and pepper to taste

PROCEDURE:
1. Put the butter, peas and mint in a sauce pan, turn up the heat, once it sizzles, cover the top and simmer for about 10-mins. Season with lime juice, salt and pepper.
2. Lightly mash the peas with a masher or fork, you can use a immersion blender if you’d like a smooth mash, taste, adjust, taste.
3. Make these a day before and heat before serving.
